Puebla-Style Molotes

  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 1 cup chorizo, cut into cubes
  • 2 cups potato, peeled, cooked, cut into cubes
  • 2 cups masa harina, for the molotes
  • 1 cup wheat flour, for the molotes
  • 1 tablespoon baking powder, for the molotes
  • 1 tablespoon lard, for the molotes
  • salt, for the molotes
  • water, lukewarm, for the molotes
  • vegetable oil, for frying
  • sour cream, for garnish 
  • Romaine lettuce, shredded, for garnish
  • queso fresco, for garnish

  • For the chorizo hash: In a saucepan over medium heat, heat oil. Cook onion for 3 minutes. Add chorizo and press slightly with a spoon until crumbled. Cook for 5 minutes or until cooked through. Add potatoes, salt, and pepper. Mix until completely incorporated. Set aside.
  • For the molotes: In a bowl, mix masa harina, baking powder, lard, and plenty of salt. Mix until completely incorporated. Pour in lukewarm water little by little and knead until a soft and moist dough is obtained.
  • Form a dough ball with your hands. Place dough ball over butcher paper and roll out to a 4.7 x 2.3-inch oval. Using a spoon, place chorizo hash in the middle. Seal dough tightly around the chorizo hash. Gently press the edges with your fingers to keep stuffing from spilling when frying Puebla-style molotes.
  • In a pot over medium heat, heat plenty of oil and fry Puebla-Style molotes for 6 minutes on each side or until golden brown. Drain on a paper towel-lined plate.
  • Garnish Puebla-style molotes with sour cream, lettuce, and queso fresco. Serve Puebla-style molotes with the salsa of your choice.
